my technique from the pan is oven at 225

sear high enough that internal just gets to 100 when outside is gtg

throw in oven for 5-10 minutes depending on thickness

comes out with the benefits of resting but also the hot surface temperature that is so satisfying

agree if off grill but out of pan hard to beat the taste improvement

yes! i've actually never seen someone letting it rest while barbecuing in brazil (something i deeply miss)
