resting a steak is sound technique though can be done better or worse (more on this another time) but over rated something deeply lindy about pulling meat off a fire and biting into it while the kiss of flame is fresh

agree if off grill but out of pan hard to beat the taste improvement

my technique from the pan is oven at 225 sear high enough that internal just gets to 100 when outside is gtg throw in oven for 5-10 minutes depending on thickness comes out with the benefits of resting but also the hot surface temperature that is so satisfying
