For using Apple Watch only leaving phone at home record with voice memos and feed to a transcription service when back at your desk. For iPhone Otter.ai is what I use it’s not as good as some others in terms of accuracy but easy to use app and good enough for my purposes

ok this seems to have worked I use drafts app for notes usually so I setup a shortcut called new draft that uses the dictate with draft action invoked Siri on my AirPod with a double tap -> new draft -> dictate the text

seems like you need the iPhone unlocked for this to work with drafts but I don’t want to pull my iPhone out to unlock it however with apple’s default notes app this is not needed so using notes now, seems to work fine
