Mirza Ghasemi is a simple and delicious Iranian dish with an attractive appearance. Ingredients: 4 eggplants 3 tomatoes 3 eggs 4 garlic cloves Salt, pepper, turmeric Oil Instructions: 1. Roast the eggplants over an open flame or in the oven, peel, and mash them. 2. Prepare the tomatoes by peeling and chopping them. 3. Fry the garlic in some oil until golden. 4. Add the mashed eggplants and tomatoes to the garlic. Season with salt, pepper, and turmeric. Cook until the liquid evaporates. 5. Add beaten eggs and mix until fully cooked. 6. Serve in a dish, garnish with herbs, and enjoy with bread or rice.

Simple and delicious! I make similar spreads at home every now and then too. I learned a recipe that resembles this one a lot when I lived in Romania, they call it Zacusca, and the only big difference is that it also has bell peppers. But at home I have made it exactly like that too, with boiled eggs instead of poached, amazing dish!

It was interesting to see that Romania also has a dish similar to Iranian ones. Yes, it’s truly delicious, and whenever you make it, enjoy it 😋😊
