as an intermediate home cook i prefer "principles"-based cookbooks like salt fat acid heat, ratio, etc. bc it allows me to remix whatever i have in the kitchen and pantry, rather than having to buy specific ingredients (which as you know, challenging for a home cook who always has leftovers of one thing or another!)

of course the other influence is watching cooking youtubers, and i purchase their cookbooks to support their content. my latest purchase is big vegan flavor by rainbow plant life, bc her recipes have good satisfying profiles to me despite being plant-based
