It’s not easy to find kale around here. I saw a 750g pack at the supermarket on Monday and bought it. But that’s a lot of kale! I’ve been eating it every day and still have half of the pack left. Do you have any suggestions for ways to prepare it? I’m looking for simple recipes. 🥬

Freeze for later ;) I made a lasagna the other day that originally called for spinach, but I used kale and wild greens from the garden instead. It turned out really nice. https://www.simplyrecipes.com/recipes/vegetarian_spinach_and_mushroom_lasagna/

Wow! It sounds delicious. I’ll try to make this recipe one day. But with less cheese. Do you freeze the kale raw?

I chop it and freeze raw. I made the lasagna with less cheese and regretted it. There is no such thing as too much cheese. So I made another lasagna because I had gluten free lasagna noodles left. The second was puttanesca. Because @ivenka does not like sardines I froze half of it for later. But to be honest I could have eaten leftovers of that for more days 😆
