Anyone have any recommendations for a structured dev course that’ll take me from basic HTML/CSS/JS knowledge to be able to build products on a whim? Ideally sets me up with a foundation that I can apply to any language, framework, etc.

I personally started with developedbyed.com with just the basics, html css and js. Then took his course into react. Probably the best $40 I’ve ever spent. His style is certainly different but really helped me understand a lot of stuff. What will drive you even more is building a project which is something you do in his courses. As someone who took the self taught road, I do wish going back I learned more about data structures and algorithms. If you’re just getting started, Codecademy has some good hands on courses that can introduce you to the fundamentals. But you should look at a bootcamp if you’re serious about learning and want to speed run a bit of the heavy lifting.

Scrimba is a really nice platform - interactive and educational screencasts with online IDEs to build in, great community and many free resources

I'd suggest Max Schwarzmüller or Jonas Schmedtmann's Udemy courses, for a good basis on JavaScript. Those will give you also conditions to think like a programmer in any language thereafter.
