Ok. A couple comments here. 1. You’re not using enough pepper and salt before cooking it. More pepper and salt will create a better crust and sear. 2. You need more heat. Whatever temperature you’re using. Double it. At least for the searing part. You can sear and then put it in the oven. Get it really crispy. 3. Baste in butter and garlic. 4. Rest 5-8 minutes.

5. Dry the surface as much as possible before salt/pepper; salt & cook within 10min OR after 1 hour, the salt brings water to the surface otherwise

Made using cast iron skillet, not on a grill.. Agree re: butter & garlic.. used lots of butter but was low on garlic at home 5 to 8 mins is the way πŸ‘ŒπŸ‘Œ
