Ok. A couple comments here. 1. Youโ€™re not using enough pepper and salt before cooking it. More pepper and salt will create a better crust and sear. 2. You need more heat. Whatever temperature youโ€™re using. Double it. At least for the searing part. You can sear and then put it in the oven. Get it really crispy. 3. Baste in butter and garlic. 4. Rest 5-8 minutes.
