Please post a photo after the baking. I never tried 72 hour dry brine- a bit afraid it will be dried out but maybe I’m wrong.

will do 🫡 re: 72 hr brine, same, first time so i'm a little worried on how it'll turn out on game day. but my wife really likes how 48 tastes and thinks it can only get better so yolo!
