My grandma used to make very thin fried zucchini slices - just lightly floured (and fried in plenty of oil, lol) I've tried a few times but it's very hard to get the right thickness and cooking time to get them crispy but not #000

Ooh fried zucchini is amazing!! I've also found it really challenging to get the right texture. I need to get a thermometer to monitor the oil temperature which may help :)

Nice idea, are there ones made just for oil? By the way she did it in a pan (good amount of oil, but not deep-fried). Also the water coming out of veg like zucchini makes this extra hard. I don't think she dried them out on kitchen paper first, but she might have?

Yes I believe there are ones that can clip onto the side of a pot to help monitor the temperature (though I've never used one) :) So true about the water! Sometimes I will slice my zucchini, sprinkle it with salt, then let it sit for a few minutes to help release the excess water first. I'll then use a paper towel to wipe away the water before frying :)
