stop listening to users. observe them, instead. people either give answers they think are expected, cant accurately remember what they’ve done in the past, or under/overestimate what they’ll do in the future.

I cannot recommend enough actually video taping people using your product with minimal guidance and then rewatching the session. Sometimes people do not verbalize but you can see them getting lost or frustrated.
