My favorite thing from my time in Japan has been just watching people execute their craft with meticulous detail and skill… The 70 year old tempura master who’s been doing it for 30+ years; the father/son duo executing a flawless omakase; the bartender who spends 10 minutes cutting the most perfect ice cubes,etc

It is mesmerizing to see people in flow do a craft they’ve perfected over many years. And, most importantly, they genuinely care about the outcome (ie what they deliver to you).
