OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

Not conventional, but breakfast cultures that were also aligned with the last Industrial Revolution; the breakfast optimization question to get out the door at 7am made veggies skip the brekkie table. Who has time for halloumi, cucumber, and tomatoes in the morning before a grueling 9-5 day? You need bacon for it 🀣
