Do all of the extra fancy, slow gear-forward intermediary steps really change the chemistry / flavor / extraction versus a normal paper filter and a Chemex pour over? Not to be a naysayer, but this feels like a coffee process for those with lots of extra disposable income, time and no kids.

I just do a french press, but yes some of these methods alter the flavor. And yes, these exotic methods are catered to the wealthy.
