1.5” thick cut minimum in my opinion… I grill really hot (800°) with cast-iron, ghee, rosemary and sage And then finish it with a quick sear once the steak is rare

If I’m feeling really fancy, I will make duck fat potatoes after with the rendered fat from the steak
