Cast iron: heaviest, slowest to heat, best heat retention Carbon steel: lighter (than cast iron), faster to heat (than cast iron), more responsive to heat (than cast iron) both are heavier, slower to heat, and less responsive than aluminum, clad aluminum (stainless steel 3 or 5 ply), or copper
