Soto Banjar recipe, a flavorful and aromatic dish from Banjarmasin: Main Ingredients - 1 whole free-range chicken (cut into pieces) - 2 liters of water - 3 stalks of lemongrass (bruised) - 5 kaffir lime leaves - 3 cm cinnamon stick - 3 cardamom pods - 2 cloves - 1 teaspoon salt - 1 teaspoon sugar - Cooking oil (for sautéing) Ground Spices - 6 garlic cloves - 8 shallots - 3 cm ginger - 1 teaspoon whole white pepper - 1 teaspoon nutmeg powder Toppings and Sides - 200 grams glass noodles (soaked in hot water, drained) - 3 boiled eggs (cut in half) - 2 stalks of celery (finely chopped) - 2 stalks of green onions (finely chopped) - 100 grams potato fritters (perkedel) - Chili sauce and sweet soy sauce (to taste) - Lime wedges Soto Banjar is best enjoyed hot with lontong (rice cakes) or steamed rice.
