I use a 100% coco-soy blend in my products, which makes it good for the environment but it causes frosting. 

I can add paraffin wax to prevent frosting, but paraffin is essentially plastic. 

Should I have a candle that is pretty but bad for the environment, or ugly and good for the environment?

Imperfection can be part of the design. If it is thought out and intentional, is it bad design? (I think not).

Also, beauty is relative and the impact on the environment isn’t 😉
