Total noob question - Will the computationally intensive nature of zk prover networks/markets be as energy demanding (if not more) as bitcoin mining?

Not exactly. Such systems function with much more efficient algorithms and will have to be optimised through and through lest they lose money and business on the costs the incur. Consumers want lower prover costs.

Lower costs along with speed, I'm guessing... Hot take - Except the virtue signaling, I'm not sure if the consumer will ever be interested in reducing energy requirements

Optimisations give the lower cost with speed. Users care for incentives, if they can avoid needlessly losing money on their trade, they’ll take the option that maximises their gains. P.S. will need more context for that diagram
