I think they want other people to eat more plants, and they see making them taste like something familiar as a more realistic path to achieving that outcome?

This seems right for the movement. Vegans attempt at product-led growth?  But for a lot of vegans, I assume their disdain for animal products has nothing to do with flavor or even personal health.

Yes I see that. Unfortunately, it's unnatural. And this sets the stage for other aspects of our life like dating/relationships using virtual reality, etc.
