OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

Indeed! One of my favorite things about Chinese cuisine is the excellent vegetable selection. Though even there it's not perfect, there are times when I only see ζ²Ήζ‘ and θ±ζ΅ and η²₯.

It feels in my experience that, while different cultures differ in the absolute level of veggie availability, you pretty much everywhere get less veggie at breakfast and more at lunch/dinner.
