OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

It’s only the British bias. Chinese breakfast has vegetables! 🍆🥦🥒🥕🌽🍅🥬🌶️🧅🧅🧄🫛🫑

Indeed! One of my favorite things about Chinese cuisine is the excellent vegetable selection.

Though even there it's not perfect, there are times when I only see 油条 and 豆浆 and 粥.
