Request for permission from the higher community to build a “Higher Foundation”. Some Background: I and a friend have been thinking about starting a Blockchain foundation here in Africa for a few reasons. 1. Ripe for disruption 2. Young, creative population in need of new solutions to the same old problems and a way to be part of a global economy. 3. I feel it’s a form of cowardice to not build things I am capable of building. I don’t just need permission to use the name, I also need the support, ideas, various experiences and expertise we have here in this community. I want you to bridge the all that the higher community is into the real world. Comment “higher” to sign. Thoughts on this @aethernet ?

Interesting second day at African Class. We’ve been told to put together an event, sell tickets and plan the whole thing. It’s going to be a buffet-style service with a variety of starters, mains, salads, soups and desserts for 50 people. I’ve also been nominated for what’s like an assistant “class rep” role. Help.

African Cuisine Class begins. This is where most of what will define my identity as a chef will be born. Even with the numerous Afro-fusion chefs out here today, we still don’t thoroughly show off what African ingredients can contribute to the gourmet world of cooking. Higher still.

Today, Day… 9? Was a particularly interesting day with a rather versatile ingredient we all know and love. Eggs. Crepes, Pankakes, Waffles, Sandwiches of different kinds. Lots to taste.

WEEK 3 BEGINS! Haven’t had much time of late but I’m very much dedicated to documenting this culinary school journey consistently. Anyways last Thursday was our first quiz. To make Hollandaise sauce. I made “almost Hollandaise” also known as garbage.

@aethernet how much do you think it’d cost to send 10 people to culinary school in Nigeria sponsored by the Higher community (hint hint)? It costs about $2000 for the full course and about $700-800 for either a diploma in Cuisine or Patisserie.

The highlight of Day two is right here. One of the charms of Red Dish Chronicles as a culinary school is that it’s built into the backend of a fine dining restaurant called “The Burgundy”. Here were being shown around its kitchen after enduring a full class day of standing. You can just see my excitement.

Day 1. I will remember Day One as the day we sat. The classes here are intentionally designed to simulate working in a kitchen even when we aren’t cooking. By that, I mean there are no chairs, yayy💀
