I’ve at least mastered the look and feel of vada in my air fried version. Still comes out relatively tough rather than fluffy. Hard to stop it from drying out.

Thanks! Will try the ramekin hack next time. Baking soda is a common hack but hasn’t worked for me for this. Whipping might work… the dough is roughly pizza/bread consistency. Adding water creates shaping tradeoff (the donut shape won’t hold)

bring water to a boil and transfer it to a ramekin in the middle of the air fryer; 

OR Add more liquid to the mix; 

OR use a lil baking soda; 

OR whip the mixture like a mofo

Not versed in making vada but I know how to troubleshoot in the kitchen!

Hmmm 

Can you spray (mist) with water halfway through the baking process? 

Or... Par bake at a lower temp? Then air fry right before eating? (Possibly also spritzing with water)

Last idea, bake them and then wrap them in a clean kitchen towel in a basket to slightly steam them a bit 🤷‍♀️
