I've heard many podcasts and read many posts that describe the need for this yet not with blockchains and crypto.

I don't get ignoring technology that is perfectly suitable for this just because it's been used for things that you don't like or agree with.

It's like not wanting to use AI because it can be used for deep fakes or not wanting to use nuclear power because it can be used to make nuclear weapons.

Controversies of blockchain speculations aside, there are quite a few examples where simply slapping a  “on-chain” label on a service is not ideal. Quite a few companies have gotten away with it.

Store data on-chain when/if it makes sense, no?

It’s what makes sense about “sufficiently decentralized” too.
