Almond Coffee Cake Pierogi. 

A sweet dessert dough made with almond flour, cinnamon and brown sugar stuffed with an almond cream, cream cheese mixture topped with icing and almond whipped cream.

I know turning your hobby into a job isn’t technically always psychologically healthy but you could build an extremely successful pierogi empire.

My biggest problem is living in a city that a new pierogi place/ provider opens every 4 months and saturates the market.

Wait that’s a thing??  Where do you live? The rest of the world (with the exception of Poland) isn’t like that. You could start your empire elsewhere.

I would love to visit Buffalo. I have a Polish-American friend who lives there. 

I had a lot of family that lived upstate but in the Eastern part of the state and I spent a lot of time in the Adirondacks. I love upstate ny!

Buffalo, NY has a big Polish community. Not counting restaurants or churches, I can think of over 10 different pierogi suppliers in the area currently. I should’ve moved away years ago to start one but I love living here.

I never heard of that! When I lived in Warsaw I left before the spring (I was only there for autumn and winter). The only holiday I remember was polish Independence Day which had already been co-opted by Neonazis and we were warned not to leave our homes for the day because the streets were full of people in SS uniforms trying to start shit. 

Terrifying.
