Of the 18 or so people at Merkle, I think I know where 3/18 went to college.

College is helpful for career if:

1. You major in something with hard skills
2. In the US, you got to a school that gives you an initial professional network

But after your first or second job, most places just care about what you've done at the previous job (or built on your own).

While working in Food Safety and Quality for 5 years, I gained more skills and credentials on the job than I did in college. After outgrowing my position and interviewing elsewhere for positions I was overqualified for I was told I couldn’t be hired because I don’t have a college degree.

Stuffed Roasted Poblano Pierogi: Chorizo, shrimp, rice and cheese filling in a roasted poblano cilantro dough.  Roasted and puréed the peppers for fuller flavor and to create the illusion of a stuffed pepper.

Who says pierogi don’t go with salad? Chicken Caesar Pierogi are the perfect match. 

Grilled chicken, Parmesan cheese and Caesar dressing in a garlic dough.

This week was the first week I didn’t earn any rewards and happened to be the first week I didn’t cast any pierogi.

Chicken Souvlaki Pierogi. 

I started my restaurant journey working in a 24/7 Greek Diner so it’s only fair to take that knowledge and inspiration to make these. 

Greek marinated chicken and feta for the filling in a dill seasoned dough. Paired with a Greek salad and homemade tzatziki.

Taking full advantage of having to wear a pillow.
