Aside from the ability to create a newsletter on Paragraph, what differentiates Mirror and @paragraph ?

Paragraph & Mirror are actually part of the same company. Our plan is to bring the best of Mirror over to Paragraph and then focus all development efforts on improving Paragraph. Still working on specifics - more to come very soon. https://paragraph.xyz/@blog/paragraph-mirror-fundraise

Would you say it is recommendable to then just use Paragraph? Cause currently I run different publications on both platforms ... should I think of unifying early?

I guess another question then is can I run separate publications on @paragraph with the same wallet?

At the moment, we only allow for one publication per account. It's pretty easy to create a new account, though totally recognize this is less than ideal — something we have on our backlog.
