I still don’t really understand channels.

Should I default to using one? Only if it’s super relevant? 

Is it a way to reach new people? Or to narrow who among your audience it hits?

questions like this make me think i should just sit down and write a "how to use farcaster" guide 

it's not obvious, and there's a lot of info, but it's straightforward to play the game here and i think people would benefit

I've been using Farcaster since April, and there have definitely been times when I thought having a guide would be helpful. 
Since there wasn't one, I kind of just figured things out through trial and error. I also asked friends for advice along the way.
 Having a guide would definitely be useful.
