I'm seriously contemplating setting up an ETH validator.

yup used an Intel NUC, 16GB ram, and running dAppNode as the OS. Makes it fairly easy. Some hiccups after the merge but figuring it out. Has run carefree for a year or so.

I have a 2TB NVMe in there but I’d actually suggest doing a smaller drive for OS and 3TB+ for data

Makes it easy to mix and match popular ELs and CLs as well. Geth, Nethermind, Prysm, Lighthouse, Teku, etc.
