I think there are ways to be experimental with it - drying it, smoking it etc. but there’s nothing like a fat slab of meat with some butter and thyme on it 😹

Couldn’t agree more Every year I go to Roberta’s in Bushwick for my bday. On my 32nd they had a special 32oz steak that was dry aged, room temp, in a farmhouse upstate. Obviously had to get it. Was one of most interesting things I’ve ever had. Notes of puer tea, orange natural wine, and truffle 🤤
