It was a surprise for me when I discussed pasta with my Italian friend. She opened the kitchen drawer and demonstrated me types of pastas she had (many! for the soup, pasta, or just a garnish etc). And yes, itā€™s not about stereotypes, we really came to the conclusion that the structure and form of pasta (and ingredients that are ā€œstuckā€ in it while cooking) affects different areas of tongue which leads to different tasting. Share your thoughts on this if thatā€™s true/not true.
