How true is the saying "all the billionaires I know are Excel gods"? Getting good at Excel/Sheets seems like one of the highest-ROI skill (I'm still learning).

In my experience you should delay implementing data warehousing and pipelines until absolutely necessary. It’s expensive and brittle and the ecosystem is quite fragmented.

All the billionaires I know, hire an excel god. 

High ROI skill, yes. One that will keep you employed for someone else.

Gsheet works wonderfully well for most SMEs

I will disagree with this as I've seen some gnarly excel workflows to achieve business processes that is 10x simpler in other mediums.
