Korean shortribs (as we know them with the thin cross cut slices) have a similar story

When Korean immigrants showed up in LA and wanted to make food from the motherland, that cut (used in a bunch of Latino cuisine) was the only shortrib cut they could find

They made do, discovered it's actually great, and it became so popular that Korea Koreans adopted it too
