I have been toying with the idea of a Hypersub subscription based on my /books reading list. However, my previous experience with Substack (I wrote a weekly newsletter for ~2 years) makes me hesitate. Towards the end the newsletter became less fun, but I felt obligated to keep going since I had paying subscribers.

Do it! Make clear that there is no guarantee of a set amount of pieces. Offer some other unique benefits that only you can offer. Maybe somethjng unique to view.art Offer people a gated chat too (if you want) - they are big value add for my hypersub personally.
