There is a very special reason: Fridays are considered the day of Oxalá, the orixá of peace and ancestry.  People dress in white in honor and devotion to him.

i love how the color white is 
associated with funeral rites and mourning 
in some places, and weddings in others...

white being the presence of all colors 
i suspect this makes a lot of sense!
