In France, the smaller the number, the larger the oyster. They are usually named by the area they come from + the number

TIL! I wish we had this rating in Canada but I fear our oyster culture isn’t quite there yet. On the upside we have a ton of great producers and terroir so we will get there

I spent a summer in Lyon and it was eye-opening for my food education! In Canada because of our unique origin we could have had French food, British culture, and American technology. …but instead we got British food, American culture, and French technology 🤷
