Right?  And those places are so quality as a result.

Honestly it's the same in Quebec - a ton of quality small shops.

One of the things I most enjoyed in my recent trip to Japan; the family-operated restaurants, cafes, shops, bars owned by a 1-2 friends who love bartending, the grandma with a sandwich shop only open on weekends.

Everything is financially viable - seems like an impossible standard these days.

Regulations made it so it’s difficult to start a crypto small business, and if OpenAI has their way it will be the same for Ai.  So it takes political will as well.

The upturn after 2020 makes me wonder if the inability to gather in an office during the pandemic has prompted a change in business organization styles - and, if so, if that trend will continue.
