Today I had a coffee that the processing method was anaerobic washed. It was from El Salvador and tasted pretty good. Does anyone know what anaerobic washed means? What is anaerobic in the process and what’s the aim of this process?

skin and fruit were pulped before they fermented (in a no-oxygen-environment) and dried the cofffe, it's also called honey. by sealing the pot, co2 is produced and pushes oxygen to the upper part, when it leaves trough a valve. this encourages the formation of lactic acid and intensifies flavors in the coffee. aerobic coffee requires much more care when being produced hope i helped???

A lot! So it is honey! I like honey because it is in between washed and natural. Now it makes a lot of sense. It was a very good coffee! 50 $degen
