A good way to assess someone's product intuition is to evaluate their generative vs. evaluative thinking. Generative thinkers see possibilities everywhere—the ppl who instantly envision 10 new features from the latest iOS dev kit. Evaluative thinkers excel at sharpening ideas, spotting flaws, and improving them. The best product minds balance both, but most people lean toward one. Cultivating both mindsets is key to better product thinking.

my best ideas come from obsessively thinking about the problem for weeks or even months. hard to assess in an interview imo.

This is why I lean so hard on past experience in interviews. If I can get someone to let their guard down enough to really start talking about a past product it becomes pretty clear if they've done the thinking or not. Ticket monkeys abound across disciplines. The ones who go deeper are gems
