My wife constantly takes pics of the kid and asks me to take videos etc.

I don't mind, but I am not as enthused as her. And I barely look at those pictures again. 

Photos/Videos never appealed to me even before having a kid. I only like to snap a very candid picture that I think is special. Anything orchestrated makes me not want to do it.

Are dads (and in general men) more inclined to be this way vs moms?

I have never been particularly into photos / videos in general. But I have to say that now that I have a child, I do like to look at the pics/videos I took of him.
