Won't this infinitely extend tho, like if we have someone watching the watchers, whose watching the watcher of the watchers? Is the only way to rid these fears to do all of the testing personally yourself? (That would obviously be nice if feasible, but at some point with almost everything we're left to trust someone else to some degree, and that's scary but I think also a beautiful part of humanity's ability to coordinate)

Pretty much. But you start to realize everyone lies, too. The label exists to make your choice easier and to give you false security about what you buy

I prefer farm to table or other vertically integrated enterprises because it reduces the number of parties I have to trust. In coffee, this has gotten pretty easy as there's a lot of roasters that have eschewed fair trade certification in favor of going to origin and working directly with farmers.

Oh yeah I totally agree with this. especially most certification labels being utter BS. The "everyone lies" fact is sort of why it doesn't matter how many layers of "watchers" you have, because every layer has an incentive to lie no matter how many there are
