You should not be able to export your private key from any wallet UI

You shouldn't, you should transfer the assets to another wallet if that's what you're trying to do. There's no reason to export a private key under any circumstances

so if i need to deploy a new contract i do it from a new wallet and store the private key when the wallet is being created and then just send assets to that wallet to have everything on every other wallet secure?

NEVER deploy a contract from a plaintext private key. That's very very bad practice and way too common. There are tools (including thirdweb) that lets you deploy any sort of contract from a normal wallet browser extension (or hardware wallet, which you should be using anyway) You should also never import plaintext private keys to a wallet UI :)
