My in-laws gave me this coffee from Redstart Roasters here in Pittsburgh. This is a unique heirloom Ethiopian variety with practically no acidity and blossoming floral notes. I love the birds they have on their packaging too - they appeal to my wife who likes birds more than coffee!

Yeah, I love the clarity too. There was a while I gave up on the siphon because I would either choke it or back off the flame too early and it would siphon too quickly but I'm glad I've given it more chances.

No, I use blue bottle's recipe which specifies to let the water come down a bit in temperature before adding the coffee, and then the flame is only lit for about a minute with the coffee in there.

Nothing beats the mad scientist feeling of brewing in a siphon
