OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?

Indeed! One of my favorite things about Chinese cuisine is the excellent vegetable selection. Though even there it's not perfect, there are times when I only see 油条 and 豆浆 and 粥.

Although under some cases Chinese breakfast has veggies in it, I still figured that in most cases, veggies is not popular in most Chinese cuisines. I guess for breakfast, ppl are prioritizing calories intake for the rest of the day, as a result most options are carbs and fat.

No no no there’s a lot of veggies in actual Chinese dishes! American Chinese dishes are a strange branch of Chinese cuisine, kind of like the McDonald’s of Chinese cuisine. There’s a really cool talk about this here: https://m.youtube.com/watch?v=U6MhV5Rn63M

Hhh nah… I mean the authentic ones are also primarily carbs and fat, regardless of some options like 白灼生菜/菜心 in dim sum and a few others. Think about 小面,热干面,生煎包,卤煮,肠粉,小笼包… oh I’m hungry😂
