It's the same dynamic as any other protocol that has existed before blockchains came around. Email works because people want to pay for the convenience of a managed experience. HTTP works because people want to pay for the managed experience provided by ISPs. BUT importantly, these protocols allow you to run these services on your own without paying a third party.
