The video requirement is offputting—keep an application format to one medium I suspect they'll lose out on a bunch of potential high quality applicants because of it

I get your point, but at the same time, I appreciate that they do want to see the people behind the application. It's only a 1-minute video, and as a founder, you constantly have to go out and present anyway. Gotta to be comfortable with this blinking red dot.
