the pancetta is key - I’ll have to try. (Also my knife is from korin too!)

I grew up with a tomato base bolognese too. This wasn’t heavy during or after consumption.

Pancetta, whole milk, stock, and the paste reduced down made a comparable sauce texture. I would recommend the recipe.
