camping recipe blogs are the best for this! they take into account minimal dish usage and cleanup 

my fave recipes are set-it-and-forget-it like curries, stews, soups, etc 

fajitas or stir fries are also excellent. a lot of wok-based recipes are good too. 

grab yourself a mini rice cooker and you’re set :)
